Recipe: Huon Smoked Salmon Avocado Toast

Lunch. Who has time for that?? Between emails, laundry & ferrying the kids to their next appointment (Swimming! Play dates! Doctor! Birthdays!) I’m lucky if I inhale an apple & neck an espresso. Trouble is, I get to 5pm – ravenous – and then wolf enough pasta to support a Tuscan village 😑


So this week I’m amping my lunch game with help from Huon Salmon.


Ethically harvested in the pristine waters of the Huon River, Tasmania, #huonsalmon is your quick & healthy lunch sorted. Harvested at night, so it’s fresher by day, this omega-3 rich fish is a one-stop-shop of energy, protein and seriously fresh flavour. Grown using sustainable and best practice farming techniques, the brand is the work of Peter and Frances Bender who commenced salmon farming in the ‘80s and continue the Australian-owned, family-run operation today.


Best of all: this tasty little lunch bite takes about 3 minutes to whip up and even less to devour (see IG Stories for how!) The edible flowers on top are just me gettin’ my fancy foodie on — optional, but totally not required.

      • Huon Premium Cold Smoked Salmon
      • Rye bread
      • Avocado
      • Cucumber
      • Lemon


Serves 1 ravenously hungry mama



  1. Toast bread
  2. Slather avocado on toast
  3. Peel cucumber strips & add on top
  4. Top with Huon Premium Cold Smoked Salmon
  5. Garnish with edible flowers
